After doing some research, and talking to folks, I decided to buy my solar hardware from an outfit called  RV Solar Electric. While they are not the absolute cheapest, their prices are reasonable, their shipping costs are really good (something to keep in mind when dealing with solar panels and batteries), they have package deals and they offer lots of free phone support. I am sure there are a lot of other good places as well.

Here is a breakdown of the costs:

Two Shell SQ-75P Solar Panels - 75 Watts each, 4.65 Amps each at load $885
Blue Sky Solar Boost 2000E MPPT Charge Controller - 24 Watt $205
Mounting Hardware for Solar Panels $35
30 feet of UV Resistant 10 gauge wire, Fuse, misc. hardware $35
Two Optima 55AH AGM Batteries (Already Own) - Normally $120+ each $0
300 Watt Inverter (for small 110V AC appliances) (Already Own) $0
Total $1160

Here is a photo of the basic kit (The original controller, shown here, was replaced later with the MPPT controller):

Now it's time for Installation,
